How to make it

  • Preheat oven to 350F(180C)
  • Cook potatoes in boiling salted water until tender. Drain and mash; add the butter and flour; stir until potatoes are firm enough to form a ball. Refrigerate for about 30mins.
  • Roll the potato pastry out between 2 pieces of baking paper until about 25cm round; remove top paper and gently lower, paper side down into a 22cm springform pan. Press gently to make a pie shell.
  • Whisk eggs and cream in a bowl, add cheese, spinach and nutmeg. Season with salt and pepper. Pour into prepared pan and bake 45-50 mins. or until set and golden brown.
  • Cool, then remove from springform.

    Different - maybe 4 to 6 slices of cooked bacon and 1 sliced zuccini added for another version!

    Oh how fun - that would be PERFECT for a picnic or bbq or potluck or buffet...I love the idea of the potato crust - and the filling sounds like an excellent match for the spuds! Thanks, deb - I've printed this one off for a future run...Krum
