Perfect Picnic Potato Quiche Recipe
A bit different than a regular quich as the potatoes are the pastry. A great choice for picnics, it is quite sturdy and tastes great at any temperature.

Ingredients
  • 4 large potatoes, peeled and chopped
  • 20g butter
  • 1/4c flour, sifted
  • 3 eggs
  • 300ml cream
  • 1/2c grated sharp cheddar
  • 1/2c parmesan cheese
  • 1 bunch spinach, finely sliced
  • 1/2t nutmeg

Directions
  1. Preheat oven to 350F(180C)
  2. Cook potatoes in boiling salted water until tender. Drain and mash; add the butter and flour; stir until potatoes are firm enough to form a ball. Refrigerate for about 30mins.
  3. Roll the potato pastry out between 2 pieces of baking paper until about 25cm round; remove top paper and gently lower, paper side down into a 22cm springform pan. Press gently to make a pie shell.
  4. Whisk eggs and cream in a bowl, add cheese, spinach and nutmeg. Season with salt and pepper. Pour into prepared pan and bake 45-50 mins. or until set and golden brown.
  5. Cool, then remove from springform.

Different - maybe 4 to 6 slices of cooked bacon and 1 sliced zuccini added for another version!
