Perfect Picnic Potato Quiche Recipe

Ingredients

4 large potatoes, peeled and chopped

20g butter

1/4c flour, sifted

3 eggs

300ml cream

1/2c grated sharp cheddar

1/2c parmesan cheese

1 bunch spinach, finely sliced

1/2t nutmeg

Directions

Preheat oven to 350F(180C)

Cook potatoes in boiling salted water until tender. Drain and mash; add the butter and flour; stir until potatoes are firm enough to form a ball. Refrigerate for about 30mins.

Roll the potato pastry out between 2 pieces of baking paper until about 25cm round; remove top paper and gently lower, paper side down into a 22cm springform pan. Press gently to make a pie shell.

Whisk eggs and cream in a bowl, add cheese, spinach and nutmeg. Season with salt and pepper. Pour into prepared pan and bake 45-50 mins. or until set and golden brown.

Cool, then remove from springform.
