Perfect Picnic Potato Quiche

- 4 large potatoes, peeled and chopped shopping list
- 20g butter shopping list
- 1/4c flour, sifted shopping list
- 3 eggs shopping list
- 300ml cream shopping list
- 1/2c grated sharp cheddar shopping list
- 1/2c parmesan cheese shopping list
- 1 bunch spinach, finely sliced shopping list
- 1/2t nutmeg shopping list
How to make it
- Preheat oven to 350F(180C)
- Cook potatoes in boiling salted water until tender. Drain and mash; add the butter and flour; stir until potatoes are firm enough to form a ball. Refrigerate for about 30mins.
- Roll the potato pastry out between 2 pieces of baking paper until about 25cm round; remove top paper and gently lower, paper side down into a 22cm springform pan. Press gently to make a pie shell.
- Whisk eggs and cream in a bowl, add cheese, spinach and nutmeg. Season with salt and pepper. Pour into prepared pan and bake 45-50 mins. or until set and golden brown.
- Cool, then remove from springform.
