Diabetic Fruit Cake Recipe

Ingredients

2cups dried fruit

1 cup sugar free juice(own choice)

ive used all flavours

1 cup mashed banana

1,1/2 cups s r flour

1/2teaspoon bi-carb soda

1 teaspoon mixed spice

Directions

boil fruit and juice together for 3mins

allow to cool

add rest of ingredients and mix well

line 2lb loaf tin,

pour in mixture

cook in oven,,

temp 170c

approx 55min

absolutly delicious

Thanks to all who sent in good comments, for my diabetic fruit cake. convert to a christmas cake add cherrys, and nuts which are optional and after boiling the fruit, strain out juice and add brandy and allow to soak untill fruit has cooled off, its absolutly delicious
