How to make it

  • boil fruit and juice together for 3mins
  • allow to cool
  • add rest of ingredients and mix well
  • line 2lb loaf tin,
  • pour in mixture
  • cook in oven,,
  • temp 170c
  • approx 55min
  • absolutly delicious

    thanks to all who sent in good comments, for my diabetic fruit cake. convert to a christmas cake add cherrys, and nuts which are optional and after boiling the fruit, strain out juice and add brandy and allow to soak untill fruit has cooled off, its absolutly delicious

    Thank you SO much for this recipe. My husband just loves fruitcake but can't have it because he's diabetic. He's going to be so happy you posted this!
