Ingredients
  • 4 cups grated cassava
  • 2 eggs
  • 1 1/2 cups sugar
  • 2 cans coconut milk
  • topping
  • 8 egg yolks
  • 1 cup sugar
  • 1 can evaporated milk
  • 1 teaspoon vanilla extract

Directions
  1. Drain grated cassava in a colander until dry or until there isn't any liquid present, can do overnight or about 2 hours
  2. Mix all together cassava, eggs, sugar and coconut milk until well blended
  3. Bake at 350 degrees F in a 9x13 in. pan and until top is firm, about 45 mins. to 1 hour.
  4. Topping
  5. Mix together egg yolks with sugar until sugar dissolves
  6. Add evaporated milk and vanilla extract
  7. When cake is done, pour topping mixture over cake and bake at 300 degrees F for about 30 minutes or until topping mixture is slightly firm.
