Ingredients
  • 4 slices fresh mozzarella, 1/4 inch thick
  • 1/2 cup flour with pepper to taste
  • 2 large eggs, beaten well
  • 1 cup fine fresh Italian bread crumbs
  • 1/2 cup butter
  • 1/4 cup chopped capers
  • 1/4 cup rinsed and minced anchovy fillets
  • 1/4 cup dry white wine

Directions
  1. Dredge mozzarella in flour
  2. Dip in egg
  3. Roll into bread crumbs and place cheese on a rack.
  4. In a large skillet, heat butter until hot.
  5. Saute mozzarella 1 1/2 minutes on each side until golden brown
  6. Place on small plates
  7. Add remaining ingredients to skillet and stir until heated.
  8. Drizzle sauce over mozzarella and garnish with ornamental cabbage leaves to make a colorful presentation.
