Ingredients

FISH MAYONNAISE

* 1 1/2 kilo of fresh fish suitable for soup

* 1 cup of homemade mayonnaise

* 3 medium carrots, peeled

* 1 – 2 sprigs of celery

* 1 medium onion

* 1 medium beetroot, boiled

* 1 spoonful of capers

* 2 potatoes

* A few leaves of parsley

* Salt

* Freshly ground pepper

Directions

Boil beetroot with the skin and then peel. Peel and wash vegetables and boil in salty water until soft.

Meanwhile scale and clean the fish and when the vegetables are done, remove to a platter and boil fish for 10' - 15'. Place in a colander and under running water remove skin and bones. Make sure than even the smallest bone is removed by feeling it with your fingers. Place fish in a platter. Mash the potatoes and onion and mix with a few spoonfuls of mayonnaise and the fish. Add salt and pepper if you like and mix all the ingredients. Shape on the platter and cover with the remaining mayonnaise.

Decorate as you please and place in the refrigerator before serving.
