LASAGNA WITH A KICK This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pillar Estate in Fort Worth, Texas in 1988.

Ingredients
  • 1 pound hot Italian sausage
  • 1 medium white onion chopped
  • 1 medium green pepper chopped
  • 28 ounce can diced tomatoes
  • 1 tablespoon chili powder
  • 2 teaspoons Worcestershire sauce
  • 2 cups ricotta cheese
  • 2 cups cheddar cheese shredded
  • 2 pickled jalapenos chopped
  • 6 tortillas

Directions
  1. Remove casings from sausage and crumble meat.
  2. In large skillet brown sausages with onion and green pepper for 5 minutes then drain well.
  3. Stir in tomatoes, chili powder and Worcestershire sauce then simmer 5 minutes.
  4. In bowl combine ricotta, 1-1/2 cups cheddar and jalapeno peppers.
  5. In rectangular baking dish spread a thin layer of tomato sauce then to with 2 tortillas.
  6. Top with a layer of sauce and half the cheese mixture then repeat layers.
  7. Top with 2 tortillas remaining sauce and 1/2 cup cheddar.
  8. Bake at 350 for 30 minutes then allow to stand 5 minutes before serving.
