Curried Lentil And Veggies Recipe

Ingredients
  • 1 tablespoon curry paste
  • 30g butter
  • 1/4 pumpkin, peeled and diced
  • 1 potato, peeled and diced
  • 1 onion, peeled and sliced
  • 2 cloves crushed garlic
  • 1/4 cup peas
  • 1/3 cup brown lentils
  • 1/2 cup coconut cream/ cream
  • salt and pepper to taste
  • 1 tablespoon fresh chopped coriander/parsley (optional)

Directions
  1. Melt butter in a saucepan, add the onion and stir for 2 minutes, add the garlic and curry paste and stir for a further 2 minutes.
  2. Add the water and lentils and bring to a boil; cover and simmer for 20 min.
  3. Add the potatoes and pumpkin and more water if necessary. Simmer for a further 15 minutes until tender.
  4. Finally add the frozen peas, simmer a further 2 minutes, stir in the cream, and salt and pepper to taste.
  5. Serve with rice or chapatti, and garnish with fresh herbs.
