How to make it

  • Melt butter in a saucepan, add the onion and stir for 2 minutes, add the garlic and curry paste and stir for a further 2 minutes.
  • Add the water and lentils and bring to a boil; cover and simmer for 20 min.
  • Add the potatoes and pumpkin and more water if necessary. Simmer for a further 15 minutes until tender.
  • Finally add the frozen peas, simmer a further 2 minutes, stir in the cream, and salt and pepper to taste.
  • Serve with rice or chapatti, and garnish with fresh herbs.
