Curried Lentil And Veggies

- 1 tablespoon curry paste shopping list
- 30g butter shopping list
- 1/4 pumpkin, peeled and diced shopping list
- 1 potato, peeled and diced shopping list
- 1 onion, peeled and sliced shopping list
- 2 cloves crushed garlic shopping list
- 1/4 cup peas shopping list
- 1/3 cup brown lentils shopping list
- 1/2 cup coconut cream/ cream shopping list
- salt and pepper to taste shopping list
- 1 tablespoon fresh chopped coriander/parsley (optional) shopping list
How to make it
- Melt butter in a saucepan, add the onion and stir for 2 minutes, add the garlic and curry paste and stir for a further 2 minutes.
- Add the water and lentils and bring to a boil; cover and simmer for 20 min.
- Add the potatoes and pumpkin and more water if necessary. Simmer for a further 15 minutes until tender.
- Finally add the frozen peas, simmer a further 2 minutes, stir in the cream, and salt and pepper to taste.
- Serve with rice or chapatti, and garnish with fresh herbs.
