Ingredients
  • 1 head lettuce cut
  • 1 can mandarin oranges, drained
  • 1/2 box large sprouts
  • 1-2 cups fresh snap peas cut in half
  • 3/4 cup roasted cashews
  • dressing- 1 small red onion
  • 3 cloves garlic
  • 2-3 Tbsp Dijon mustard or 1 tsp dry mustard
  • 1/3 cup vinegar
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1/2-3/4 cup oil

Directions
  1. mix all dressing ingredients and blend
  2. toss salad ingredients together besides nuts
  3. top with nuts and dressing
