Salsa Cruda Pasta Salad

- 4oz farfalle or rotini pasta shopping list
- 1/4 c EVOO shopping list
- 2 tbs balsamic vinegar shopping list
- 1 3/4 lb mixed red, yellow, and green tomatoes, seeded and coarsely diced shopping list
- 1/3 c thinly sliced green onions shopping list
- 1/3 c thinly slicked mixed fresh herbs such as basil and orgeano shopping list
- 1/2 tsp coarse salt shopping list
- 1/2 tsp pepper shopping list
- 2 oz shaved ricotta salata or romano cheese shopping list
How to make it
- Cook pasta accord to package directions. Drain and return to pot.
- Meanwhile, whisk oil and vinegar in med bowl. Stir in tomatoes, green onion, herbs, salt and pepper.
- Stir tomato mixture into pasta, tossing to mix
- Serve warm or at room temp, sprinkled with cheese.
