Arugula Salad with Lemon Tarragon Vinny

- Salad-- shopping list
- One container of arugula shopping list
- 1 fresh ear of corn, cut off the cob shopping list
- 1/4 cup thinly sliced macadamia nuts, almonds or cashews shopping list
- If making this dish in the winter, you can use a more firm lettuce like frisee(curly endive) and use pomegranate seeds instead of the corn. shopping list
- lemon and tarragon Dressing-- shopping list
- 1/4 cup fresh lemon juice shopping list
- 1/2 cup olive oil shopping list
- 1/4 teaspoon kosher salt shopping list
- 1/4 teaspoon black pepper shopping list
- 2 cloves garlic, minced shopping list
- 1/2 cup fresh tarragon, roughly chopped. shopping list
- Optional: Dash red pepper flakes(or more if you like spice like I do). shopping list
How to make it
- For the salad, combine all ingredients in a bowl...like you would for any salad...
- For the dressing, combine all ingredients, minus the oil in a bowl. Once combined, slowly start to emulsify the oil to the other ingredients with a whisk to create a vinaigrette.
- Now that your vinaigrette is finished, toss it with the salad--but not all of it because it might be too overpowering and arugula is very delicate. You can always have dressing left over!
- Eat it and enjoy!
