North Shore Omelet Sandwich

- 8 slices whole wheat bread shopping list
- butter for spreading shopping list
- 8 eggs shopping list
- 2 teaspns soy sauce shopping list
- 1/2 teaspn salt shopping list
- 1/3 Cup butter shopping list
- 4 teaspns minced chives shopping list
- 3/4 Cup finely chopped peppers shopping list
- 3/4 Cup well drained pineapple tidbits shopping list
- 1 medium tomato, chopped shopping list
- 1-1/2 Cups chopped, cooked shrimp (a boneless fish may be substituted) shopping list
- 4 slices baked or boiled ham shopping list
- watercress garnish (optional) shopping list
How to make it
- Toast bead, spread toast with butter. Trim crusts. Set aside.
- Beat eggs. blend in soy sauce and salt.
- In a large, heavy skillet, melt the 1/3 Cup butter. Add chives and green pepper. Cook for a few minutes, stirring occasionally.
- Add egg mixture to skillet. When mixture is set around the edges of the skillet, add pineapple, tomato and shrimp.
- When completely set on bottom, fold without turning over. Cook for five minutes.
- Arrange slices of ham over 4 slices of toast.
- Place one quarter of the omelet on each of the 4 ham covered toast slices.
- Top each sandwich with another slice of toast.
- Garnish with watercress, if desired.
