Ingredients
  • 8 slices whole wheat bread
  • butter for spreading
  • 8 eggs
  • 2 teaspns soy sauce
  • 1/2 teaspn salt
  • 1/3 Cup butter
  • 4 teaspns minced chives
  • 3/4 Cup finely chopped peppers
  • 3/4 Cup well drained pineapple tidbits
  • 1 medium tomato, chopped
  • 1-1/2 Cups chopped, cooked shrimp (a boneless fish may be substituted)
  • 4 slices baked or boiled ham
  • watercress garnish (optional)

Directions
  1. Toast bead, spread toast with butter. Trim crusts. Set aside.
  2. Beat eggs. blend in soy sauce and salt.
  3. In a large, heavy skillet, melt the 1/3 Cup butter. Add chives and green pepper. Cook for a few minutes, stirring occasionally.
  4. Add egg mixture to skillet. When mixture is set around the edges of the skillet, add pineapple, tomato and shrimp.
  5. When completely set on bottom, fold without turning over. Cook for five minutes.
  6. Arrange slices of ham over 4 slices of toast.
  7. Place one quarter of the omelet on each of the 4 ham covered toast slices.
  8. Top each sandwich with another slice of toast.
  9. Garnish with watercress, if desired.
