How to make it

  • Toast bead, spread toast with butter. Trim crusts. Set aside.
  • Beat eggs. blend in soy sauce and salt.
  • In a large, heavy skillet, melt the 1/3 Cup butter. Add chives and green pepper. Cook for a few minutes, stirring occasionally.
  • Add egg mixture to skillet. When mixture is set around the edges of the skillet, add pineapple, tomato and shrimp.
  • When completely set on bottom, fold without turning over. Cook for five minutes.
  • Arrange slices of ham over 4 slices of toast.
  • Place one quarter of the omelet on each of the 4 ham covered toast slices.
  • Top each sandwich with another slice of toast.
  • Garnish with watercress, if desired.
