How to make it

  • Heat the oil and cumin seeds in a large frying pan.
  • Add the chickpeas, arugula or greens, salt and sherry and stir over a medium heat until the greens have wilted and the chickpeas are warmed through.
  • Top with poached or soft boiled eggs, grilled salmon, or other seafood of your choice. Or, serve as is as a light meal for two.
