Dutch Oven Enchiladas Recipe
Great for an easy camping meal. Could also be baked in a conventional oven.

Ingredients
  • 1 chicken, boiled and boned
  • 1-2 cups broth
  • 2 chicken bullion cubes )optional
  • 1 small can chopped green chilies
  • 1 can red or green enchilada sauce
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • dash of onion powder
  • 1 lb. grated longhorn or cheddar cheese
  • 1 doz. flour tortillas

Directions
  1. Combine first 9 ingredients and 1/2 the cheese. Simmer till cheese is melted.
  2. Grease bottom and sides of dutch oven. (I line with foil.)
  3. Layer tortillas first, then chicken and sauce, and some of the grated cheese.
  4. Repeat till you run out. Use all the tortillas.
  5. Bake 30 min. with about 10 coals on bottom and 12 on top (350 degrees)
