Ingredients
  • 1 pound of scallops quartered
  • 4 TBS butter
  • 1/4 cup cognac
  • 1 cup tomato sauce ( use homeade)
  • 3 TBS fresh chopped parsely
  • 1 tsp paprika
  • 1 tsp chopped garlic
  • 1 cup grated gruyere cheese

Directions
  1. In a sauce pan heat 2 TBS butter and add the scallops. Cook, shaking the pan for 2 minutes. Add the cognac and ignite it. Cook about 2 minutes, add the tomato sauce,paprika,garlic,parsely,salt and pepper, cook another 2 minutes. Spoon equall parts into 4 ramekins, sprinkle cheese over top and bake 10 minutes on 450 degrees.
  2. Here is a simple tomato sauce. Take 2 cups of skinned and seeded tomatoes and put in a pan. Add salt and pepper to taste and reduce by half on low heat.
