Sugar Crusted Apricot Chews

- 1/2c finely chopped dried apricots shopping list
- 1/2c raisins shopping list
- 1/3c water shopping list
- 1c all purpose flour shopping list
- 1tsp baking powder shopping list
- 1/4tsp baking soda shopping list
- 1/2c chopped walnuts or pecans shopping list
- 1/2c crushed pineapple, well drained shopping list
- 2 eggs shopping list
- 1T lemon juice shopping list
- 1c sugar shopping list
- extra sugar for coating shopping list
How to make it
- Cook the apricots and raisins in water 8-10 mins. or until tender; drain well.
- Combine flour with baking powder and baking soda. Add walnuts, pineapple and the apricots and raisins to the dry ingredients; stir to coat.
- Beat the eggs with the lemon juice until foamy. Gradually add sugar, beating until just blended. Fold in the fruit mixture.
- Spread batter in a greased 9'' square pan. Bake in a 350F oven for 35 mins. or until golden brown.
- While still warm cut into squares and coat in sugar.
