BEST BEANS AND RICE

- 1 C. uncooked rice shopping list
- one 16 oz. can black beans shopping list
- one 15 oz. can dark red kidney beans shopping list
- one 15 oz. can garbanzo beans shopping list
- one 15 oz. can pinto beans shopping list
- 1 medium green pepper, chopped shopping list
- 1 medium red pepper, chopped shopping list
- 1 small onion, chopped shopping list
- one 14 oz. can stewed tomatoes shopping list
- at least 1/2 C. bottled BBQ sauce, or to taste shopping list
How to make it
- Prepare rice and set aside.
- Drain and rinse all the beans and set aside. (I like to drain them, put them all in a large colander, rinse with cold water, and let them sit to drain some more while I prepare the vegetables.)
- Spray a large skillet with no-stick cooking spray. Sauté peppers and onion over medium heat until tender. Add beans, tomatoes, and BBQ sauce and mix well. Bring mixture to a boil. Reduce heat to low and simmer, uncovered, 15 mins.
- There are a couple of ways you can serve this. Either put the bean mixture into a large serving bowl and mound the rice in the center, being sure to scoop some of each mixture when dishing up, or place both mixtures in separate serving bowls and top servings of the rice with the beans.
- Note: We especially like this served with cornbread on the side.
