Flounder In Lemon Parsley Butter Recipe
FLOUNDER IN LEMON PARSLEY BUTTER This recipe came from an estate sale. I obtained it when I purchased the family collection from the Weir Estate in Canton, Texas in 1990.

Ingredients
  • 1/2 cup butter melted
  • 2 tablespoons cornstarch
  • 3 tablespoons lemon juice
  • 1 tablespoon chopped fresh parsley
  • 2 pounds flounder filets
  • 1/2 teaspoon celery salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Melt butter in a large glass baking dish.
  2. Add cornstarch, lemon juice and parsley then stir to blend well.
  3. Dip each filet in butter sauce then arrange in baking dish butter sauce side up.
  4. Sprinkle filets with celery, salt and pepper.
  5. Cover loosely with clear plastic wrap and heat in microwave for 7 minutes.
  6. Let stand covered for 2 minutes to finish cooking then spoon sauce over each serving.
