Gorgonzola Sauce Recipe
A special item like a lobster or crab ravioli deserves a rich, complementary sauce. We had something similar on a cruise once. If only I could talk my husband into letting me add walnuts...perfect!

Ingredients
  • 1 c. milk, scalded
  • 2 tbsp flour
  • 2 tbsp butter
  • 1/2 - 3/4 cup crumble gorgonzola cheese (more if you want it richer)
  • 3 tbsp white wine
  • 1 clove garlic, minced
  • 3 tbsp asiago cheese, finely ground
  • fresh ground pepper to taste
  • fresh ground sea salt to taste
  • 1/4 tsp ground tarragon

Directions
  1. Melt butter in double boiler
  2. Stir in flour til smooth
  3. Stir in milk, whisking out lumps
  4. Grind asiago cheese into sauce
  5. Crumble in gorgonzola, stirring and adding more to desired thickness, and richness
  6. Stir in wine, season to taste and just before serving, stir in crushed dried tarragon leaves
  7. And if your dining partner will let you, sprinkle chopped walnuts over top.
  8. Excellent over seafood pasta. Also freezes quite well.
