Gorgonzola Sauce

- 1 c. milk, scalded shopping list
- 2 tbsp flour shopping list
- 2 tbsp butter shopping list
- 1/2 - 3/4 cup crumble gorgonzola cheese (more if you want it richer) shopping list
- 3 tbsp white wine shopping list
- 1 clove garlic, minced shopping list
- 3 tbsp asiago cheese, finely ground shopping list
- fresh ground pepper to taste shopping list
- fresh ground sea salt to taste shopping list
- 1/4 tsp ground tarragon shopping list
How to make it
- Melt butter in double boiler
- Stir in flour til smooth
- Stir in milk, whisking out lumps
- Grind asiago cheese into sauce
- Crumble in gorgonzola, stirring and adding more to desired thickness, and richness
- Stir in wine, season to taste and just before serving, stir in crushed dried tarragon leaves
- And if your dining partner will let you, sprinkle chopped walnuts over top.
- Excellent over seafood pasta. Also freezes quite well.
