How to make it

  • Melt butter in double boiler
  • Stir in flour til smooth
  • Stir in milk, whisking out lumps
  • Grind asiago cheese into sauce
  • Crumble in gorgonzola, stirring and adding more to desired thickness, and richness
  • Stir in wine, season to taste and just before serving, stir in crushed dried tarragon leaves
  • And if your dining partner will let you, sprinkle chopped walnuts over top.
  • Excellent over seafood pasta. Also freezes quite well.
