Cheesy Ham Macaroni Recipe
This is a great way to use up leftover baked ham. I call it rich and creamy comfort food. Also a great potluck dish.

Ingredients
  • 1 pkg.(8-oz.) elbow macaroni
  • 6 Tbsp. butter, divided
  • 1/4 cup all-purpose flour
  • 1/2 tsp. salt
  • Dash of pepper
  • 2 cups milk
  • 2 cups (8-oz.) shredded sharp cheddar cheese
  • 2 cups cubed fully cooked ham\
  • 1 can (4-oz.) mushroom stem and pieces, drained
  • 1 jar (2-oz.) diced pimientos, drained
  • 1/2 cup crushed butter-flavored crackers (about 12 crackers)

Directions
  1. Cook macaroni according to package directions.
  2. Meanwhile, in a large saucepan, melt 4 Tbsp. butter.
  3. Stir in the flour, salt and pepper until smooth; gradually stir in milk.
  4. Bring to a boil; cook and stir for 1 minute or until thickened.
  5. Reduce heat.
  6. Add the cheese; cook and stir until melted.
  7. Stir in the ham, mushrooms and pimientos.
  8. Drain macaroni; stir into ham mixture.
  9. Transfer to a greased shallow 2 1/2 quart baking dish.
  10. Sprinkle with cracker crumbs; dot with remaining butter.
  11. Bake uncovered, at 350 degrees, for 25-30 minutes or until heated through and bubbly.
