- 2 (4 oz.) boneless, skinless chicken breasts shopping list
- 2 Tbsp. olive oil shopping list
- 1 tsp. chopped garlic shopping list
- 1/2 cup shredded Chihuahua white cheese shopping list
- 2 slices American chees3 shopping list

- 2 Tbsp. chopped parsley shopping list
- 2 ozs. olive oil shopping list
- 1 tsp. crushed red pepper shopping list
- 1/8 tsp. pepper shopping list
- 1/4 tsp. salt shopping list

- ---pepper and onion Medley: shopping list
- 1 green pepper, julienned shopping list
- 1 red pepper, julienned shopping list
- 1 small yellow onion, julienned shopping list
How to make it
- Pound chicken breasts to even thickness, between 2 sheets of wax paper.
- In a small dish, combine all marinade ingredients.
- Place chicken breasts in marinade and refrigerate for 2-4 hours.
- Saute peppers and onion in olive oil for 2 minutes.
- Then add 1 tsp. garlic, and continue to saute 2 more minutes.
- Season with salt and pepper.
- Saute chicken in olive oil over medium heat; cook evenly on both sides to a golden brown color.
- Heat cast iron skillet on burner over medium heat until very hot then remove from heat.
- Place the mashed potatoes in half of the skillet.
- Place cheeses on the other half of skillet and cover with pepper and onion medley,
- Add chicken to top of pepper and onion medley, resting on the potatoes.
- Top with parsley.
- Serve directly from skillet for authenticity or transfer to plates.
