Ingredients
  • 1 1/4 cup flour
  • 3/4 cup butter
  • 1 1/4 cup ground rolled oats
  • 1 cup brown sugar
  • 1 tsp. soda
  • Filling:
  • 1 cup brown sugar
  • 2 cups chopped pitted dates
  • 1 cup water
  • Juice of 1/2 lemon

Directions
  1. Mix dry ingredients and cut in butter as you would for pastry. Cook the filling until it is thick. Spread half the first mixture into a greased 8 x 8 " cake pan. Cover this layer with filling and top with remaining crumb mixture. Bake at 300 F for about 1 hour. When cool cut into squares. Freezes well.

Actually, my niece is getting married in Mexico in October! I've posted a pic of her and her fiance. He's RCMP and she's a safety manager for a big garbage disposal company. They've got it made in the shade!
