Cumin Corn Chili

- 1-2 lbs ground bison or ground beef or not shopping list
- 2-4 cans red kidney beans shopping list
- 1-2 onions diced shopping list
- plenty of ground cumin, like a Tbsp more or less shopping list
- Tbsp chili powder - more ot less depending on the type and how you like and what you can get away with shopping list
- butter (okay, you could sautee your onions in the beef fat and then drain, or in some kind of healthy oil, but I say butter is best - especially if you are using bison(buffalo) meat as it is so lean.) shopping list

- cans of fire roasted tomatoes, tomatoes with chiles, diced tomatoes, whole plum tomatoes, tomato sauce: whatever is on hand - though I always try to be sure to have fire roasted in the mix because the flavor is just right. shopping list
- A bag of frozen corn shopping list
- sour cream and cheddar cheese to top shopping list
- and more butter if you are like me. shopping list
How to make it
- so you brown your meat
- and sautee your onions as you wish
- Now, I like to "brown the cumin too, to bring out the depth of its flavor - so work that into your sautee method, being sure to not simply stew it.
- Add tomatoes and chili powder
- bring to boil, then simmer and heat long enough to infuse flavors.
- When it is good and hot and just as you want it empty in your bag of frozen corn. No need to continue cooking - it'll be just right and ready to eat!
- top with butter, fresh ground black pepper, cheese, and sour cream please!
