Vidalia Sweet Onion Grits

- 8 slices bacon shopping list
- 16 ounce can tomatoes undrained chopped shopping list
- 1 medium vidalia onion chopped shopping list
- 2 small green peppers finely chopped shopping list
- 1/4 teaspoon granulated sugar shopping list
- 6 cups water shopping list
- 1 teaspoon salt shopping list
- 1-1/2 cup regular grits uncooked shopping list
How to make it
- Cook bacon slices in skillet until crisp then drain crumble and set aside.
- Pour off drippings reserving two tablespoons in skillet.
- Sauté onion and green peppers in drippings then stir in tomatoes and sugar.
- Bring to a boil the reduce heat and simmer 30 minutes stirring occasionally.
- Bring water and salt to boil then add grits and cook 20 minutes stirring frequently.
- Remove from heat and stir in tomato mixture.
- Spoon into serving dish and sprinkle bacon on top.
