haddock croquettes

- 700g cooked potatoes shopping list
- 60g butter shopping list
- 30ml chopped fresh parsley shopping list
- salt & pepper to taste shopping list
- 3 eggs shopping list
- 350g smoked haddock, flaked shopping list
- 250ml grated cheddar shopping list
- 100ml seasoned flour shopping list
- 200g breadcrumbs shopping list
How to make it
- mash potatoes, butter, parsley, seasonings and one egg
- add flaked fish & cheese
- divide mixture into 8 oblong shapes
- roll in seasoned flour
- beat the remaining 2 eggs
- dip croquettes into egg and then breadcrumbs
- gently fry on all sides
- drain and serve
