Ingredients
  • 700g cooked potatoes
  • 60g butter
  • 30ml chopped fresh parsley
  • salt & pepper to taste
  • 3 eggs
  • 350g smoked haddock, flaked
  • 250ml grated cheddar
  • 100ml seasoned flour
  • 200g breadcrumbs

Directions
  1. mash potatoes, butter, parsley, seasonings and one egg
  2. add flaked fish & cheese
  3. divide mixture into 8 oblong shapes
  4. roll in seasoned flour
  5. beat the remaining 2 eggs
  6. dip croquettes into egg and then breadcrumbs
  7. gently fry on all sides
  8. drain and serve
