Peanut Soup With Oysters Recipe
Some call peanut soup "groundnut soup" or even "Tuskeegee soup" after G. W. Carver made the peanut so universally important. The combination of the raw nut flavor with the oyster is a novel one to some, but a common southern staple.

Ingredients
  • 1 c shelled raw peanuts
  • 2 Tbsp chopped onions
  • 1 Tbsp butter
  • 3 c soup stock (beef or shellfish would be best)
  • 1 pint shucked oysters, well drained
  • Salt, pepper, and cayenne

Directions
  1. Grind the peanuts to a smooth paste either with a pestle and mortar or a food processor.
  2. Put the onions and butter in a 3qt pot on medium heat and cook until the onions are clear.
  3. Stir in the peanut paste and mix well with the butter.
  4. Add the broth, and cayenne to taste, and bring to a boil.
  5. Reduce heat to very low and simmer until soup is thick and nuts are cooked, about 30 minutes.
  6. Stir in the oysters and simmer until they plump and curl.
  7. Immediately take the soup off the heat, and season with salt and pepper.
  8. Serve immediately in warm bowls.
