Chicken With Apricot Picante Recipe
This is a vey easy but very tasty way to cook Chicken. I have to admit I double the Salsa and Apricots because it is too good not to double!

Ingredients
  • 4 medium skinless,boneless chicken breast halves
  • Salt
  • 3/4 cup Salsa or Picante sauce (Or in my case 1 1/2 cups)
  • 1/4 cup apricot preserves (or in my case 1/2 cup)

Directions
  1. Rinse chicken breast and pat dry and lightly salt. Place chicken on the unheated rack of a broiler pan. Broid 4 to 5 inches from heat for 10-15 minutes, turning once after half the broiling time.
  2. In a small saucepan combine salsa and preserves and cook just until heated through and preserves are melted.
  3. Spoon Salsa/Preserve mixture over chicken breast and serve.
