How to make it

  • Bring a large pot of UNSALTED water to a boil.
  • Add pasta, cook 6 minutes before adding asparagus. Cook 3 minutes longer.
  • Add snow peas to the pot, and immediately drain all ingredients.
  • Mix dressing, oregano and lemon zest.
  • Pour pasta and vegetables into a large bowl.
  • Add dressing mixture, shrimp and tomatoes, toss.
  • Refrigerate at least 1 hour, or until ready to serve.
