Lemon - Herb Summer Toss Recipe
Whole wheat pasta, fresh vegetables, bright lemon and zippy Italian dressing make this a yummy light dinner or side dish at a potluck! Serves 6 as a side dish or 4 as a main.

Ingredients
  • 3 cups whole wheat farfalle, uncooked
  • 1 lb asparagus spears, cut into 2-inch lengths
  • 4 oz snow peas, trimmed
  • 3/4 cup Fat-Free Italian Dressing
  • 2 tsp dried oregano leaves
  • 1/2 tbsp grated lemon zest
  • 1 lb cooked medium shrimp
  • 1 cup halved grape tomatoes

Directions
  1. Bring a large pot of UNSALTED water to a boil.
  2. Add pasta, cook 6 minutes before adding asparagus. Cook 3 minutes longer.
  3. Add snow peas to the pot, and immediately drain all ingredients.
  4. Mix dressing, oregano and lemon zest.
  5. Pour pasta and vegetables into a large bowl.
  6. Add dressing mixture, shrimp and tomatoes, toss.
  7. Refrigerate at least 1 hour, or until ready to serve.
