Lemon - Herb Summer Toss

- 3 cups whole wheat farfalle, uncooked shopping list
- 1 lb asparagus spears, cut into 2-inch lengths shopping list
- 4 oz snow peas, trimmed shopping list
- 3/4 cup Fat-Free Italian dressing shopping list
- 2 tsp dried oregano leaves shopping list
- 1/2 tbsp grated lemon zest shopping list
- 1 lb cooked medium shrimp shopping list
- 1 cup halved grape tomatoes shopping list
How to make it
- Bring a large pot of UNSALTED water to a boil.
- Add pasta, cook 6 minutes before adding asparagus. Cook 3 minutes longer.
- Add snow peas to the pot, and immediately drain all ingredients.
- Mix dressing, oregano and lemon zest.
- Pour pasta and vegetables into a large bowl.
- Add dressing mixture, shrimp and tomatoes, toss.
- Refrigerate at least 1 hour, or until ready to serve.
