BLISTERING BRITTLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pillar Estate in Fort Worth, Texas in 1988.

Ingredients
  • Cooking spray
  • 1-1/2 teaspoons hot pepper sauce
  • 1/4 teaspoon ground allspice
  • 1-1/4 cups dry roasted peanuts
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon butter
  • 1 teaspoon vanilla extract
  • 1-1/2 teaspoons baking soda

Directions
  1. Lightly coat spatula and large baking sheet with cooking spray then set aside.
  2. Combine hot pepper sauce and allspice in large bowl then add peanuts and toss well.
  3. Combine sugar and corn syrup in microwavable bowl then microwave on high for 4 minutes.
  4. Remove from microwave and stir thoroughly then add peanuts and stir again.
  5. Microwave again on high for 5 minutes until light brown then remove bowl from oven.
  6. Add butter and vanilla then blend and microwave on high for 1 minute.
  7. Remove bowl from oven then gently stir in baking soda until well mixed and foamy.
  8. Pour onto greased baking sheet and cool.
  9. As brittle cools on baking sheet stretch it into thin sheets by pulling candy with two forks.
  10. When cool and set break into pieces.
