Windmill Cookies Recipe
WINDMILL COOKIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pillar Estate in Fort Worth, Texas in 1988.

Ingredients
  • 1 cup dates chopped
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • Dough:
  • 2 cups brown sugar firmly packed
  • 1 cup shortening melted
  • 2 eggs beaten
  • 1 cup sour milk
  • 2 cups whole wheat flour
  • 2-1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon

Directions
  1. Simmer dates, sugar and water for 5 minutes then stir in lemon juice and salt.
  2. Set aside then preheat oven to 375 and grease a cookie sheet.
  3. Mix sugar and shortening then blend in eggs and milk.
  4. Sift together flours, baking soda and cinnamon then add to sugar mixture mixing well.
  5. If necessary add more flour to make dough stiff enough to roll out.
  6. Roll dough 1/8" thick on a floured surface and cut out cookies with a round cookie cutter.
  7. Place 1/2 of the cookie rounds on the cookie sheet and top each with a spoonful of filling.
  8. Add top cookie round which has been decorated by four small knife slits at right angles.
  9. Bake 10 minutes then transfer to wire rack to cool completely.

This was my favorite cookie when I was a little girl and whenever I went to the store with my mom, she'd let me pick out a package of them... I have never seen a recipe for these and I can't wait to make them! :)
