How to make it

  • Bring plenty of salted water to a rolling boil and cook penne 5-6 minutes.
  • Add asparagus OR broccoli, and beans if using; cook 3-4 minutes.
  • Add snow peas (if using them instead of beans) and shrimp; cook 2 minutes more.
  • Reserve 1/2 cup pasta water and drain the rest.
  • Return penne mixture to hot pot over low heat.
  • Add to it the oil, lemon juice, garlic and 1/4 cup pasta water. Season with pepper and extra salt if needed (careful; feta is salty) and toss.
  • Gently mix in the feta and as much more water as needed to form a creamy sauce.
  • Serve immediately. Yum!
