Shrimp Penne With Feta

- 12 oz. dried penne shopping list
- 1 lb. raw shrimp, de-veined shopping list
- 1 lb. asparagus, cleaned and cut into 1" pieces, OR shopping list
- 3/4 lb. raw broccoli, cleaned and divided into florets shopping list
- 8 oz. snow peas OR shopping list
- 8 oz. fresh green beans, cleaned and cut in two shopping list
- 3 TBS olive oil shopping list
- 2 TBS fresh lemon juice shopping list
- 2 minced garlic cloves shopping list
- 6 oz. feta cheese, crumbled shopping list
- Freshly ground black pepper shopping list
How to make it
- Bring plenty of salted water to a rolling boil and cook penne 5-6 minutes.
- Add asparagus OR broccoli, and beans if using; cook 3-4 minutes.
- Add snow peas (if using them instead of beans) and shrimp; cook 2 minutes more.
- Reserve 1/2 cup pasta water and drain the rest.
- Return penne mixture to hot pot over low heat.
- Add to it the oil, lemon juice, garlic and 1/4 cup pasta water. Season with pepper and extra salt if needed (careful; feta is salty) and toss.
- Gently mix in the feta and as much more water as needed to form a creamy sauce.
- Serve immediately. Yum!
