CAJUN SHRIMP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cullen Estate in Allen, Texas in 1984.

Ingredients
  • 1/2 of a lemon
  • 1/3 cup water
  • 1 small white onion chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon cooking oil
  • 2 cloves garlic minced
  • 1 tablespoon Cajun seasoning
  • 1/4 teaspoon salt
  • 1-1/2 pounds fresh or frozen peeled medium shrimp
  • 1/2 cup chopped green or red sweet pepper
  • Lettuce leaves

Directions
  1. Carefully remove peel from lemon half being careful not to include the white portion.
  2. Cut the lemon peel into very thin strips.
  3. Combine lemon peel, water, onion, lemon juice, cooking oil, garlic, Cajun seasoning and salt.
  4. Place in large skillet and heat to boiling then add shrimp stirring to coat.
  5. Return to boiling then reduce heat and simmer covered for 5 minutes stirring twice.
  6. Stir in bell pepper then transfer mixture to a glass bowl.
  7. Cover and marinate in the refrigerator 4 hours stirring mixture occasionally.
  8. At serving time drain mixture well then serve in a lettuce lined bowl with serving picks.
