Ingredients
  • 1 medium pineapple, peeled and cored
  • 8 oz granulated sugar
  • 8 oz cider vinegar
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 Tbsp Madras curry powder
  • Heated canning jars with llids

Directions
  1. Cut pineapple into small pieces. Use a plate to save the juice.
  2. Pour juice, sugar and vinegar into a large saucepan and bring to a boil.
  3. Add spices and simmer for 5 minutes.
  4. Add pineapple and cook for 10 minutes over low heat, stirring well.
  5. Pour chutney into hot jars and seal.
  6. *This recipe yeilds about 1 lb of chutney.
