Gazpacho Soup

- 6 ripe tomatoes, peeled and chopped shopping list
- 1 purple onion, finely chopped shopping list
- 1 cucumber, peeled, seeded, chopped shopping list
- 1 sweet red bell pepper (or green) seeded and chopped shopping list
- 2 stalks celery, chopped shopping list
- 1-2 Tbsp chopped fresh parsley shopping list
- 2 Tbsp chopped fresh chives shopping list
- 1 clove garlic, minced shopping list
- 1/4 cup red wine vinegar shopping list
- 1/4 cup olive oil shopping list
- 2 Tbsp freshly squeezed lemon juice shopping list
- Salt and fresh ground pepper to taste shopping list
- 6 or more drops of Tabasco sauce to taste shopping list
- 1 t. Worchestershire sauce shopping list
- 4 cups tomato juice shopping list
How to make it
- Combine all ingredients. Blend slightly, to desired consistency. Place in non-metal, non-reactive storage container, cover tightly and refrigerate overnight, allowing flavors to blend.

- Don't add extra salt. Use low sodium tomato juice or the fresh stuff, Sprinkle fresh ground pepper to speckle entire top of soup in container, used 20 drops of tabasco
