Chile Cheese Cornbread Recipe
This is an incredible cornbread with a nice creamy texture and a little bit of zing with the green chilies. I like it served right out of the oven with herb butter, but also good at room temperature. Enjoy

Ingredients
  • 1-1/8 cup yellow cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup whole wheat flour
  • 1-1/4 cups buttermilk
  • 1 egg lightly beaten
  • 1 egg white lightly beaten
  • 1/4 cup sharp cheddar cheese shredded
  • 2 tablespoons mild green chilies chopped

Directions
  1. Preheat oven to 450 and prepare square baking pan with cooking spray.
  2. Dust with tablespoons cornmeal.
  3. Sift into a large bowl the remaining cornmeal, baking powder, baking soda, salt and flour.
  4. In another bowl combine buttermilk, eggs, cheese and chilies then stir into dry ingredients.
  5. Pour batter into prepared baking pan and place in upper third of oven and bake 10 minutes.
  6. Cut into squares and serve.
