SUPREME BURRITO This recipe came from an estate sale. I obtained it when I purchased the family collection from the Nicholas Estate in Dallas, Texas in 1986.

Ingredients
  • 1 pound lean ground beef
  • 1/4 cup all purpose flour
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon dried minced onion
  • 1/2 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1/2 cup water
  • 16 ounce can refried beans
  • 8 large flour tortillas
  • 1/2 cup enchilada sauce
  • 3/4 cup sour cream
  • 2 cups shredded lettuce
  • 2 cups shredded cheddar cheese
  • 1 medium tomato diced
  • 1/2 cup diced yellow onion

Directions
  1. Combine beef with flour, chili powder, salt, onion, paprika, onion powder and garlic powder.
  2. Use your hands to thoroughly mix ingredients well.
  3. Add seasoned beef mixture to water in a skillet over medium heat.
  4. Mix well with wooden spoon and break up meat as it cooks.
  5. Heat 5 minutes or until browned.
  6. Heat up beans in a covered container in microwave set on high for 2 minutes.
  7. Place tortillas on a plate and cover with plastic wrap then heat 45 seconds in microwave on high.
  8. Build each burrito by first spreading 1/4 cup refried beans on center of a heated flour tortilla.
  9. Spread 1/8 of meat mixture over beans then pour a tablespoon enchilada sauce over meat.
  10. Stir sour cream well then spread 1-1/2 tablespoons onto burrito.
  11. Arrange some of the lettuce, cheese, tomato and onion onto tortilla.
  12. Fold end of tortilla closest to you over filling ingredients.
  13. Fold either left or right end over next then fold top edge over filling.
  14. You will be leaving one end of the burrito open and unfolded.
  15. Repeat with remaining ingredients and serve immediately.

Oh hell yeah! Now I'm hungry! BTW, what brand of chili powder do you use?


Yep, i know burritos and this is a good one! Hatch brand enchilada sauce will make these sing in your mouth.


I use Tone's chili powder and I do agree with squirrel that the hatch brand enchilada sauce is the way to go. Yummers.
