How to make it

  • Bring a large pot of lightly salted water to a boil with uncooked eggs in it. Add pasta and cook for 8 to 10 minutes, or until al dente. Drain, and rinse with cold water until no longer hot. Transfer noodles to a large bowl.
  • Cool, peel and chop eggs and mix in chopped eggs with noodles.
  • Stir in red bell peppers, green bell peppers, green onions, onion, celery and olive oil. Mix in mayonnaise, vinegar and soup mix and rest of ingredients except shrimp and eggs. Refrigerate at least a few hours before serving. I wait overnight and add more buttermilk if dry.
  • Before decorating, check to see if pasta has absorbed all the liquid and add more buttermilk, if necessary, Decorate with shrimp and paprika or Old Bay before serving.

    I like your recipe for the 'Macaroni Salad'
    and especially the use of a 'soup mix' for part of the seasoning...I am sure this is one of the ingredients that makes it a "5"FORK!!!!! WINNER!
