Semi-Spicy Teriyaki Shrimp Recipe

This recipe goes from mild to hot and all stops in between. The heat sneaks up on you but doesn't overpower the flavor. The glaze can be used on all manner of seafood. Indoor or outdoor cooking methods.

Ingredients
  • 1/4 - 1/2 lb Shrimp
  • 1/3 cup Teriyaki Sauce
  • 1 tbsp Sesame Seeds
  • 1/2 tsp Sesame Oil
  • 1/4 tsp Oregano
  • 2 tsp Granular Sugar
  • 1 pinch 5 Spice
  • 1 tsp Sea Salt or Kosher Salt
  • 1/2 tsp Ground Black Pepper
  • 1/2 tsp Red Pepper Flakes
  • 1/2 tsp Olive Oil - I only use Extra Virgin
  • 1 pinch Garlic Powder
  • 1 pinch Wasabi Powder - you won't need more than that, even if you like it hot ;)

Directions
  1. Place20-40 small skewers in water to soak.
  2. Turn your Oven on to Broil @ 400 degrees or High (ovens vary). Make sure a cooking rack is up high.
  3. Prepare a 2" deep baking pan with aluminum foil in the bottom and a wire rack to "grill" on.
  4. Wash, shell, and de-vein shrimp.
  5. Combine rest of ingredients in a deep enough bowl that all shrimp can be covered then put in Shrimp and make sure all are coated.
  6. Spray your rack with Pam and place in the oven to warm.
  7. You'll let the shrimp sit at room temperature for desired spiciness. 5 minutes for mild, don't add extra glazing. 7 for medium, add a little extra glazing. 10 for hot, will require 2 glazings.
  8. Skewer the shrimp (generally 2 for small skewers or 6 for regular) through head and tail, allowing each to touch slightly (they'll draw up).
  9. Take your pan out of the oven. Spray your wire rack with a second coating of Pam. Place your skewers on the wire rack (they'll sizzle a bit) and glaze.
  10. Put the pan back in the oven and leave the door open a bit so the element stays on (that's what gives it good color) for about 5 minutes.
  11. Take the shrimp out and turn them over. Add a second coat of glaze if desired.
  12. Put back in the oven for another 3-5 minutes with the door cracked open.
  13. Remove from oven and let cool on plate.
  14. Serve on bed of white rice and garnish with parsley sprig.
