Sausage And Herb Stuffing Recipe
Great substitute for regular high carb stuffing...and this is so delicious.

Ingredients
  • 3/4 lb turkey sausage (can also use pork breakfast sausage)
  • 1/4 c. finely chopped celery
  • 1/4 c. chopped red onion
  • 2 eggs
  • 2 c. coarsely chopped cauliflower
  • 1/2 c. diced yellow squash
  • 1/2 c. grated Parmesan
  • 1 T. chopped parsley leaves
  • 3 T. chopped fresh sage leaves
  • 3 T. chopped fresh thyme leaves
  • 1 T. minced garlic
  • 1/8 t. salt
  • 1/8 t. fresh ground black pepper

Directions
  1. Preheat oven to 350 degrees.
  2. Remove sausage from casing and crumble into a pan over medium heat.
  3. Add teh celery and noin and cook, stirring, until browned.
  4. Drain fat if necessary.
  5. Beat the eggs in a bowl.
  6. Using a spoon, mix in the sausage mixture and all the remaining ingredients.
  7. Pour the stuffing into a 8 inch baking dish.
  8. Bake until hot and browned, about 30 minutes.
  9. Serve immediately
