How to make it

  • Empty the tofu and minced celery into a bowl, set aside.
  • Combine all the other ingredients in a bowl, and whisk until combined.
  • Pour over the tofu, and mix with a fork until the tofu breaks down and it looks like egg salad.
  • Eat.

    Note for vegans and eggless people: Real mayonaise contains eggs, so opt for the Vegenaise (refrigerated section of health food store and similar to Hellman's) or Nayonaise (might be on the shelf and is said by many to be closer to Miracle Whip) or other eggless mayo to have the recipe truly egg-free and vegan.
