Very light and refreshing creamy dessert that is good to serve with any meal. This is very tasty and very fruity. Enjoy

Ingredients
  • 2 tablespoons water
  • 1 envelope unflavored gelatin
  • 1/2 cup granulated sugar
  • 1-1/4 cup cold water
  • 3/4 cup evaporated milk
  • 1 tablespoon almond extract
  • 15 ounce can mandarin orange segments drained
  • 15 ounce can pineapple tidbits drained

Directions
  1. In small bowl combine 2 tablespoons water and gelatin then allow to stand 1 minute to soften.
  2. In a small saucepan combine sugar, 1-1/4 cups water, milk and softened gelatin.
  3. Cook and stir over medium-high heat until mixture boils.
  4. Remove from heat and stir in almond extract.
  5. Pour mixture into square baking dish then refrigerate 2 hours.
  6. To serve cut pudding into 16 squares then spoon orange segments and pineapple into 8 bowls.
  7. Top each with two pudding squares then serve.
