Peppered Pork Chop Casserole Recipe
These are delightful little pork chops from my neighbor's collection. He is always coming up with new ways to cook pork chops and this one is very tasty, very impressive and super easy. Great for a quick week night meal. Enjooy

Ingredients
  • 6 pork chops
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 medium green peppers cut into 1/4" rings
  • 1-1/2 cups uncooked regular rice
  • 16 ounce can tomato sauce
  • 1 cup water
  • 1/2 cup chopped white onion
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Directions
  1. Sprinkle chops with salt and pepper and arrange in a lightly greased rectangular baking dish.
  2. Top each pork chop with one green pepper ring then spoon rice into and around rings.
  3. Chop remaining green pepper rings then stir in remaining ingredients and pour mixture over rice.
  4. Cover and bake at 350 for 60 minutes.
