Summer Medley Meal Recipe
For those hot summer days when fresh produce is in abundance and the last thing you want to do is have a hot kitchen! A favorite family meal, ready in 1/2 hour.

Ingredients
  • 2 TBS good-quality olive oil
  • 1 lb. ground beef
  • 2 red onions, chunked
  • 2 large carrots, sliced
  • 2 medium eggplant (aubergine), chunked
  • 2 medium zucchini, chunked
  • 2 cloves garlic, pressed or finely chopped
  • 1 large can chunky tomatoes
  • 1 beef soup cube
  • 1 TBS tomato paste
  • Mrs. Dash seasoning
  • Salt to taste

Directions
  1. Heat the olive oil in a large pan until shimmery.
  2. Brown the beef.
  3. Add onions and carrots stir a few minutes.
  4. Add the rest of the veggies and stir-fry a few minutes more.
  5. Add the tomatoes and paste, soup cube, about 1 tsp. Mrs Dash and salt to taste.
  6. Lower heat, cover and simmer for about another 10 minutes.
  7. Serve in deep bowls with warm crusty sourdough bread.
