Summer Medley Meal

- 2 TBS good-quality olive oil shopping list
- 1 lb. ground beef shopping list
- 2 red onions, chunked shopping list
- 2 large carrots, sliced shopping list
- 2 medium eggplant (aubergine), chunked shopping list
- 2 medium zucchini, chunked shopping list
- 2 cloves garlic, pressed or finely chopped shopping list
- 1 large can chunky tomatoes shopping list
- 1 beef soup cube shopping list
- 1 TBS tomato paste shopping list
- Mrs. Dash seasoning shopping list
- salt to taste shopping list
How to make it
- Heat the olive oil in a large pan until shimmery.
- Brown the beef.
- Add onions and carrots stir a few minutes.
- Add the rest of the veggies and stir-fry a few minutes more.
- Add the tomatoes and paste, soup cube, about 1 tsp. Mrs Dash and salt to taste.
- Lower heat, cover and simmer for about another 10 minutes.
- Serve in deep bowls with warm crusty sourdough bread.
