Sun Dried Tomato Chicken Alfredo Recipe
A tasty chicken alfredo with sun dried tomatoes and basil makes this a really flavorful dish! I was worried my sauce didnt turn out creamy enough, but the flavor was still wonderful

Ingredients
  • 2 (16 oz) cans evaporated skim milk
  • 3/4 cup finely chopped sun dried tomatoes
  • 1 cup grated parmesan cheese
  • 1/2 tsp crushed red pepper flakes
  • 1 tsp garlic powder
  • 1 tsp dried oregano leaves
  • 1 cup coarsely chopped cooked chicken
  • 8-10 oz fettucine
  • 3 tbsp thinly sliced fresh basil leaves

Directions
  1. Warm milk on stove on medium heat
  2. Add tomatoes, 3/4 cup cheese, red pepper flakes, garlic powder, and oregano
  3. Bring to boiling, stirring constantly until thick
  4. Reduce heat and stir in chicken, simmer 10 minutes
  5. Cook pasta as directed and drain
  6. Pour sauce over pasta
  7. Sprinkle with remaining cheese and basil

I'm a huge fan of sundried tomatoes. Can't get enough of them! Pairing them with Alfredo is a stroke of genius! I've never made Alfredo with evaporated milk either, interesting.
