Ingredients
  • 2 tablespoons butter
  • 1 cup celery sliced
  • 1/4 cup white onion chopped
  • 3 cups cooked chicken cubed
  • 1/2 cup cashews chopped
  • 1/4 cup chicken broth
  • 10-3/4 ounces condensed cream of chicken soup
  • 1-1/2 cups frozen peas
  • 2 ounces sliced pimentos drained
  • Topping:
  • 1/2 cup chow mein noodles
  • 1/4 cup cashews coarsely chopped

Directions
  1. Heat oven to 350.
  2. Melt butter in large saucepan over medium heat then add celery and onion and cook 3 minutes.
  3. Stir in all remaining casserole ingredients then pour into ungreased casserole.
  4. Bake at 350 for 35 minutes then sprinkle combined topping ingredients over top.
  5. Bake an additional 5 minutes or until topping is warm then serve immediately.
