Red Flower Pilaf Soup Recipe

Ingredients
  • 1 teaspoon extra virgin olive oil
  • 5 cloves garlic, minced
  • 1 red onion, diced or sliced
  • 1 head cauliflower, broken into large pieces
  • 3 large carrots, diced
  • 1 quart water or vegetable stock
  • 1 bunch fresh red Swiss chard, chopped
  • 3 cups Kashi 7 Whole Grain Pilaf, cooked
  • Salt and black pepper to taste

Directions
  1. In a medium saucepan, cook olive oil, garlic, onion, cauliflower, and carrots on medium heat until onion is soft, stirring frequently.
  2. Add water or vegetable stock and bring to a light boil.
  3. Lower heat and simmer until cauliflower and carrots are tender. Add chopped red Swiss chard, stir in cooked pilaf and cook until chard is tender, but still brightly colored.
  4. Add salt and pepper to taste.

Interesting recipe. But the soup sure sounds very good!


Love the Swiss chard - I make a similar soup with it, less the rice. I love the texture of it in the soup and the red color that gives to the soup itself. Good recipe!
