Red Flower Pilaf Soup

- 1 teaspoon extra virgin olive oil shopping list
- 5 cloves garlic, minced shopping list
- 1 red onion, diced or sliced shopping list
- 1 head cauliflower, broken into large pieces shopping list
- 3 large carrots, diced shopping list
- 1 quart water or vegetable stock shopping list
- 1 bunch fresh red swiss chard, chopped shopping list
- 3 cups Kashi 7 Whole Grain Pilaf, cooked shopping list
- salt and black pepper to taste shopping list
How to make it
- In a medium saucepan, cook olive oil, garlic, onion, cauliflower, and carrots on medium heat until onion is soft, stirring frequently.
- Add water or vegetable stock and bring to a light boil.
- Lower heat and simmer until cauliflower and carrots are tender. Add chopped red Swiss chard, stir in cooked pilaf and cook until chard is tender, but still brightly colored.
- Add salt and pepper to taste.

Interesting recipe. But the soup sure sounds very good!

Love the Swiss chard - I make a similar soup with it, less the rice. I love the texture of it in the soup and the red color that gives to the soup itself. Good recipe!
