How to make it

  • In a medium saucepan, cook olive oil, garlic, onion, cauliflower, and carrots on medium heat until onion is soft, stirring frequently.
  • Add water or vegetable stock and bring to a light boil.
  • Lower heat and simmer until cauliflower and carrots are tender. Add chopped red Swiss chard, stir in cooked pilaf and cook until chard is tender, but still brightly colored.
  • Add salt and pepper to taste.

    Love the Swiss chard - I make a similar soup with it, less the rice. I love the texture of it in the soup and the red color that gives to the soup itself. Good recipe!
