Turkey Meatball Salad

- 6 scallions, cut into 2-inch lengths shopping list
- 2 red bell peppers, ribs and seeds removed, cut into strips shopping list
- 2 tablespoons plus 4 teaspoons olive oil shopping list
- coarse salt and ground black pepper shopping list
- 16 ground turkey meatballs ( seasoned as you desire ) shopping list
- 2 tablespoons red wine vinegar shopping list
- 2 teaspoons Dijon mustard shopping list
- 1 head red leaf lettuce, torn into bite-sized pieces shopping list
- 1 ounce parmesan cheese chunk, shaved with vegetable peeler shopping list
How to make it
- Heat broiler with rack 4 inches from heat source.
- On rimmed baking sheet, toss scallions and peppers with 2 teaspoons oil.
- Season with salt and pepper.
- Push ingredients to one side of sheet.
- Place meatballs on other side of sheet and toss with 2 teaspoons oil.
- Broil, tossing vegetables and turning meatballs occasionally until
- meatballs are cooked thoroughly and vegetables are lightly charred (10 to 12 minutes).
- Remove from oven and cool for 3 minutes.
- In large bowl, whisk vinegar and mustard with remaining 2 tablespoons oil. ( one can make and use more of same dressing if desired )
- Season with salt and pepper.
- Add lettuce, scallions and peppers- and toss to combine.
- Top with meatballs and sahved Parmesan.
