Billys Skirt Steaks Recipe
This is one of Katie Lee Joel's recipes. She has a new cook book, ''The Comfort Table'' I love this book! Makes 4 to 6 servings.

Ingredients
  • 1 2-lb. skirt steak
  • 1/2 cup fresh
  • 1/2 cup olive oil
  • 8 garlic cloves, minced
  • 2 1/2 Tbsp. anchovy paste (1 1/2 ounce)
  • 2 tsp. freshly ground pepper
  • 1/4 cup fresh cilantro, chopped
  • plus sprigs for garnish

Directions
  1. Rinse steak and pat dry.
  2. In a medium bowl, whisk together juice, oil,garlic, anchovy paste
  3. and pepper until combined well.
  4. Place in a large heavy duty resealable plastic bag with steak and
  5. seal, turning to coat. Marinate in the refrigerator, placing bag
  6. in a bowl to catch any leaks, turning bag occasionally, at least 4 hrs.
  7. or overnight.
  8. Heat a grill or a grill pan over medium- high heat.Remove steak from
  9. marinade and grill, turning once, until an instant-read thermomter
  10. inserted in thickest part registers 145 F for medium rare, about
  11. 8 minutes. Transfer to a cutting board and slice on the diagonal.
  12. Sprinkle with cilantro and garnish with sprigs, if desired.
