Cool Caribbean Pumpkin Soup

- 1 Tbs canola oil shopping list
- 1 Tbs butter shopping list
- 1 tsp each: cinnamon and cumin shopping list
- 1 med onion chopped shopping list
- 5 cups fat free chicken broth shopping list
- 1/2 cup smooth peanut butter shopping list
- 1, 15 oz can pumpkin ( not pie filling ) shopping list
- 2 ripe banans sliced shopping list
- 1 cup coconut milk ( not coconut cream ) shopping list
- Garnish: mango chutney to taste shopping list
How to make it
- Prep time does not include chill time
- Saute onion in the oil and butter. till tender.
- Stir in spices and cook 1 minute.
- On low heat, stir in broth , peanut butter and pumpkin and stir to dissolve peanut butter.
- Cool mixture 15 minutes.
- Put half in a blender with 1 banana and 1/2 cup conut milk.
- Blend smooth and repeat with other half.
- Chill one hour or more.
- Garnish soup with dollops of mango chutney to taste
