Ingredients
  • 1 Tbs canola oil
  • 1 Tbs butter
  • 1 tsp each: cinnamon and cumin
  • 1 med onion chopped
  • 5 cups fat free chicken broth
  • 1/2 cup smooth peanut butter
  • 1, 15 oz can pumpkin ( not pie filling )
  • 2 ripe banans sliced
  • 1 cup coconut milk ( not coconut cream )
  • Garnish: mango chutney to taste

Directions
  1. Prep time does not include chill time
  2. Saute onion in the oil and butter. till tender.
  3. Stir in spices and cook 1 minute.
  4. On low heat, stir in broth , peanut butter and pumpkin and stir to dissolve peanut butter.
  5. Cool mixture 15 minutes.
  6. Put half in a blender with 1 banana and 1/2 cup conut milk.
  7. Blend smooth and repeat with other half.
  8. Chill one hour or more.
  9. Garnish soup with dollops of mango chutney to taste
