Aunt Carols Amaretto Cake Recipe
(I haven’t made this or tasted it yet, but my mother swears by it…and my Aunt Carol is a wonderful cook…so, here it goes…)

Ingredients
  • Cake
  • 1 package Yellow Cake Mix
  • 1 package Instant Vanilla Pudding
  • 4 Eggs
  • 1/3 cup Amaretto
  • 1/2 cup oil
  • 1/3 cup finely chopped almonds
  • Glaze
  • 4 tbsp. butter
  • 1/4 cup Amaretto
  • 1/2 cup brown sugar

Directions
  1. 1. Grease and flour tube pan. Cover bottom of pan with finely chopped almonds.
  2. 2. Stir together cake mix and dry vanilla pudding. Beat in eggs, oil, and Amaretto, stirring just until batter is smooth. Pout batter over nuts and bake at 300 degrees for 1 hour and 15 minutes. Remove from oven and let cool in pan. (Leave the cake in the pan.)
  3. 3. Place butter, 1/4 cup Amaretto, and brown sugar in pan and bring to a boil, stirring. Remove from heat. Poke holes in top of cake and spoon glaze over the top until absorbed.
  4. 4. Allow to cool, transfer to cake dish, let sit overnight before serving.
