Ingredients
  • Olive Oil- 1 Tbp
  • Garlic-Couple cloves, coarsely chopped
  • 1 Can Diced toms
  • 2 Cans Veggie Broth
  • 1/2 Bag frozen Tortellini
  • 1/2 Bag Spinach- thawed and squeezed

Directions
  1. Remove Spinach from freezer and place desired amount on a plate to thaw-once thawed squeeze any excess water out
  2. Chop garlic
  3. Bring canned tomatoes, veggie broth to a boil
  4. Add Tortellini
  5. Lastly, add spinach
  6. Bring to a boil, then reduce to simmer for a few minutes
  7. Add Parm. Cheese on top and Enjoy!
